Pasta Aglio Olio with Tuna and Broccoli

I find myself cooking easy and simple dishes these days because I want to eat better. This is my way of adding more vegetables to my diet. Since I only love broccoli, it’s the star vegetable appearing in the recipes I post on the blog.

I didn’t follow any recipe so the ingredients and directions are estimates depending on your preference. I used penne rigatoni because it’s the noodle we had at home. I think you can make this with whatever noodle you prefer.


Ingredients
250 g Rigatoni Pasta
2 cans of tuna in vegetable oil
Broccoli
Black Olives
Garlic
Salt
Pepper

Directions
1. Cook your noodles. While cooking the noodles, cut your broccoli to size.
2. In another pan, boil water to blanch the broccoli.
3. Once the noodles and broccoli are cooked, set them aside.
4. Prepare to cook the tuna. Add oil, garlic, salt and pepper to the pan.
5. Add the tuna to the pan. Cook until texture is desired. Set the tuna aside.
6. Now, we add all the elements together. In a big sauce pan, add oil and garlic. Once the garlic turns brown, add the noodles. Pile on the other ingredients after: the tuna, broccoli and black olives.
7. Top with parmesan cheese.

The garlicky flavor I wanted didn’t stick to the noodles. The additional flavor of the tuna, olives, and parmesan cheese made up for the noodles mild flavor. This pasta dish is my version of trying to have a light dinner.
