Inspired to eat healthy: Citrus Salmon with Broccoli Recipe

Sunday, December 22, 2013

I am not a healthy person. I like my junk food and I am dormant. This November, I decided to make a few changes. These changes are small so I don’t see massive results yet but I needed to do it on my own pace. I’ve been doing my goal of working out 3 times a week which is an accomplishment for me. I honestly lack discipline in the trying to be healthier department. In terms of food, I’m trying not to snack as much as I used to. I also tried to cook! I don’t cook but I try to prepare a dish once a quarter.

I also don’t like vegetables but I do love broccoli. I made this Citrus Salmon with Broccoli recipe from Better Homes and Gardens. Oh I also like lemons! I’ve been making lemon water a lot this year.

Citrus Salmon with Broccoli
Makes: 4 servings
Start to Finish: 22 mins

Ingredients
    1    lemon
    1    tablespoon sugar
    2    tablespoons butter
4    4 ounces skinless salmon fillets
    Salt
    Ground black pepper
    1    tablespoon snipped fresh dill
    1    tablespoon olive oil
    1    pound broccoli, trimmed
4    cloves garlic, peeled and sliced
Lemon slices and fresh dill (optional)

Directions
1. Slice half of the lemon into thin slices; set aside. Juice remaining half of lemon into a 1-cup measure; add water to equal 1/2 cup. Stir in sugar. Set aside.

2. In a 12-inch nonstick skillet heat butter over medium-high heat. Sprinkle salmon with salt and pepper; add to skillet. Cook for 2 to 3 minutes or until bottom is golden; turn fillets. Add lemon juice mixture. Top with snipped dill and lemon slices. Reduce heat to medium; cover and cook 5 to 6 minutes more or until fish flakes easily when tested with a fork.

3. Meanwhile, in another skillet heat oil over medium heat. Quarter broccoli lengthwise into long spears; add to skillet along with garlic. Cook broccoli and garlic in hot oil over medium heat for 8 to 10 minutes or until crisp-tender, turning often. Serve salmon with broccoli; pour pan juices over salmon. If desired, serve with additional lemon slices and fresh dill.

Since I am NOT KITCHEN SAVY, I truly believe that if I can do this recipe, so can you. It’s that easy and delicious! Enjoy! If you have other recipes that are as easy, healthy and delicious as this, please do share the link with me. I would appreciate it immensely.
